Lotus Foods is an El Cerrito, California, company run by Ken Lee and Caryl Levine that specializes in importing heirloom and exotic rices produced by family farmers. The idea for the company came in 1993 when Lee and Levine took a marketing research trip to China. Lee and Levine found themselves in a rural area and were intrigued to be served a bowl of black rice because they had never seen such a thing. This was the impetus behind them starting Lotus Foods Inc. and introducing Forbidden Rice, their first and most popular line.[1]

Lotus Foods first introduced Forbidden Rice into the USA in 1995 and has trademarked the term. Forbidden Rice is a strain of Chinese black rice (Chinese: 黑米; pinyin: hēi mǐ) and is considered to be both food and medicine in China. Forbidden Rice has a dark purple color because it is rich in anthocyanins, which act as powerful antioxidants.[2] The rice contains more vitamin B, niacin, vitamin E, calcium, magnesium, iron, and zinc than white rice.

If I think about the word forbidden..I just think about fruit and city but now I learn about the other forbidden thing, the forbidden rice. Actually, this kind of rice is pretty easy to find in my country. It's called forbidden rice because only Royal Family who used to consume this black rice. Like in my country, only Royal people in Java used to consume this forbidden rice. Because of the high in nutritional value and rich in iron, black rice consider fancy.Anyway, now people are more concern about their health and start to consume more healthy food. Forbidden rice will turns to a deep purple when it is cooked. Black forbidden rice is a short grain rice. the rice appears to be black because of the high amounts of melanin in the bran. Black Rice is gluten free, so it great for health and good for autistic child's diet.

Made this for Unrated Asian Recipe Tag Game. A very good dish using black forbidden rice. As I can't eat eggplants, I used zucchini instead. Eggplants will have a creamier texture and absorb the liquid better, so that may be a bit more intense. But I loved the slightly sour taste of the zucchini combined with the nutty flavor of the rice and the fragrant sweetness of the almond sauce. Great idea for a sauce, I think I will use that in other recipes as well! Thanks a lot for posting this, I will definitely make it again! The pictures I took are a bit strange because the colour of the plate came out totally different from the original shade of red - it's actually dark red, which looks much prettier!
